I want to post this pics that were taken when I visited the Sydney's Fish Market. It show how an oyster man open the clams and present it. Its show a real fresh oyster being presented and washed before the customers. Pic below show how the oyster man stabbed the edge of the clam to open it. The small knife was very sharp.
After that, the man cut and peeled the oyster under water, then he would presented the fresh oyster in the clam.
Below is how they sell the oysters, together with a piece of lemon.
